Hydrating Cucumber Salsa

As our weather is warming up it is so important to enjoy foods that are hydrating and to drink lots of water.  If you are thirsty this means you are dehydrated.

I discovered a recipe, Cucumber Lime Salsa more than a decade ago in the cookbook The Girls Who Dish – Seconds Anyone  If you have not discovered these cook books “The Girls Who Dish”, highly encourage you to look for this at your local or second hand bookstore, as it features seven of the top chefs in Vancouver, BC in the late 1990s.

I really liked the idea of this recipe as it was so hydrating.  I started to make this to bring to happy hour at the lake, add as a salsa with chicken and fish for various lunches and dinners in the summer.  As time went on, I wanted to make a few changes.

The original recipe included

Cucumber, lime juice, olive oil, red onion, cilantro, mint and sugar.

Over the past few years I have continued to make some changes and landed on two versions of this recipe.  I was motivated to make additional changes, as my parents do not enjoy spice, peppers and in particular cilantro.  Making this salsa is a beautiful opportunity to visit your local farmer’s market.

Version 1 

  • 1/2 English Cucumber – diced
  • Juice from 2 Limes
  • 2 tbsp. Extra Virgin Olive Oil (a perfect reason to visit your local Olive Oil shop)
  • 3 tbsp. finely chopped Red Onion
  • 1/3 cup chopped Cilantro
  • 1 cup Grape Tomatoes, diced
  • 1/2 cup Red or Orange pepper, diced

Version 2

  • 1/2 English Cucumber – diced
  • Juice from 2 Limes
  • 2 tbsp. Extra Virgin Olive Oil
  • 1 cup Grape Tomatoes, diced
  • 1 cup fresh Watermelon, diced

Whatever version you choose, mix all ingredients together and refrigerate until you are ready to enjoy.  The Hydrating Cucumber Salsa is such a treat to enjoy at any summer gathering to help stay hydrated.  We typically enjoy this with Tortilla Chips.

I found as I was making Version 2 of the Hydrating Lime Salsa for my parents this week, the sampling of additional watermelon was so delicious.

Look for the ways you can continue to hydrate.  Drink and eat lots of hydrating foods.
