Chocolate Cherry Almond Cookies
This recipe was inspired by the Magnolia Journal from the Summer 2024 Issue.
Having a subscription to this beautiful journal is one of the ways I treat myself. I always love the recipes, quotes and stories as they are so inspiring.
As I rarely go by the book I wanted to reduce the sugar, make it vegan and gluten free.
This took a few tries to ensure the cookie stayed together.
Very thankful for my quality control team who is always open to trying something new.
A few of the changes I made:
Replaced the sugar with Date Paste
Replaced the butter with Almond Butter
Replaced the eggs with Flax Eggs, to make it vegan
Added Gluten Free Flour and Almond Flour instead of regular white flour
When Cherries are in season I will purchase these from a local market. Other times of year I purchase frozen Cherries and dry them in our oven.
