Pumpkin Cake Gluten-Free – A Favourite for the Fall
One of my favourite things for the Fall is Pumpkin. A perfect reason to drop by your favourite farm, or your local Farmer’s Market.
Pumpkin is so delicious in muffins, cakes and cookies.
Sometimes you want to enjoy cake.
Simple and tasty.
This cake started to evolve when my sister Sandra dropped by for tea.
It took a number of experiments to get the mixture of spices right.
I always love using spices from Gathering Place Trading, a local BC spice company.
And it was well worth the effort.
I made a Vegan version of this cake and my husband shared this is one of the best cakes I have made.
Recently, we had a meeting in our home, beginning a conversation on a potential community initiative.
As meetings are always better with food, I made this cake and my Earl Grey shortbread, featuring The Denman Island Tea – Cream Earl Grey. Both recipes are featured in my cookbook “Our Favourite Things – Collection of Gluten-Free Goodies.” The cake and the shortbread were a big hit and helped to nourish a wonderful conversation.
This cake is best enjoyed within three days of eating it. As it is sweetened with Dates there is no added sugar to the cake.

This cake is a perfect addition to any meal, especially as we head into the Canadian Thanksgiving Weekend.
At our meeting I turned this into a four layer cake. To do this I doubled the Cream Cheese Icing, which also included some taste testing.
